This is my favourite version of the meatless classic hamburger, it is truly healthy and full of flavour!




In my family, the main meal of the day is lunch, we usually eat lunch a bit late sometime between 3PM and 6PM. Normally the meal includes some kind of meat whether it's beef, lamb, chicken or fish. But sometimes I feel like I'm bored of having meat every single day, I end up cooking Mujaddara (An excellent option, very healthy and fills you up by the way), soup, pastries, or just a sandwich and a salad.

Yesterday we had stuffed cabbage rolls, one of my favourite meals! Not the easiest food to make as you have to roll every leaf, but it's totally worth it! Sooo, I was in the mood for burgers, but eating meat everyday is just not very healthy... About two weeks ago, I was doing some grocery shopping with my Mum at Carrefour and I bought some sweet potatoes, and this week my Mum kept nagging me how I should cook them as they've been sitting in the kitchen for too long. So I thought why not make some Sweet potato burgers with roasted garlic sauce, avocados, tomatoes, and yellow bell peppers. Sounds like a balanced meal? yep!


If you have never tried roasting garlic, you totally should it's absolutely delicious! (Follow this tutorial) The caramelised cloves have a mild flavour of garlic along with an amazing sweet flavour.

For this recipe I used Heinz baked beans, if you're not a big fan of Heinz baked beans you can use any other beans that you like. Beans are high in fibre, low fat, and they taste good! I also substituted sliced avocados for mayonnaise, less calories and fat (Especially if you're watching your weight)!

Everybody in my family LOVED these veggie burgers, and that includes my little nephew and my Dad (he's a picky eater but still ate his burger and said that it was delicious).

And the good news? with this burger you get to have your 5-a-day in just one meal! You've gotta try it!!

Sweet Potato Burgers with Roasted Garlic Sauce Recipe
(Serves: 4 servings)
Ingredients
  • 3 large sweet potatoes
  • 1 bulb roasted garlic
  • 1/2 can Heinz baked beans
  • 1/3 cup all purpose flour
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cumin
  • olive oil
  • 1 sliced avocado
  • 1 cup natural yogurt
  • 4 bread buns
  • 1 medium tomato
  • 1 yellow bell pepper

Instructions
  1. To roast garlic see this tutorial.
  2. Pierce potatoes and place in the microwave for 8 minutes on high each side, so that's 16 minutes. Remove from microwave and cool in room temperature.
  3. In a bowl, lightly mash beans, add egg, flour, salt, pepper, minced roasted garlic, and cumin. Mix, then place in the fridge for 10-15 minutes as this will help forming the mix into patties.
  4. In another small bowl, add yogurt, minced roasted garlic, pepper, and salt. Lightly mix and cool in the fridge.
  5. Heat a pan on medium heat and add a little bit of olive oil. Form sweet potato mixture into 4 equal patties and fry until both sides are golden.
  6. Place patties in bread buns, top with yogurt sauce, sliced avocados, tomatoes and bell peppers.
