Are you bored eating oatmeal and fried eggs for breakfast? Why don't you try these healthy and super delicious chocolate banana muffins? They are great for kids and adults with a glass of cold milk. A great energy boost that fills you up for long hours. These super moist, super chocolatey muffins in the morning are a pleasant start of the day especially if you're a big fan of chocolate!



Baking muffins is an excellent activity for kids. My nephew and my niece helped with peeling bananas, adding flour and sugar, and mixing all ingredients together. They enjoyed placing cupcake liners in the baking tray. Most of all, the kids loved eating these delicious muffins. This was our activity for sunday afternoon. I am sure you will enjoy it too!    



Triple Chocolate Banana Muffins Recipe
(Serves: 12 muffins)
Ingredients
  • 4 medium sized ripe bananas
  • 1/3 cup corn oil
  • 1 medium egg
  • 3/4 cup sugar
  • 1 1/2 cup all purpose flour
  • 1/4 cup cocao
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon powder
  • a pinch of salt
  • 1/2 cup white chocolate chips
  • 1/2 cup milk chocolate chips


Instructions
  1. In a medium sized bowl mix mashed bananas with oil and egg. Add sugar and beat.
  2. In another bowl combine all dry ingredients left.
  3. Stir dry ingredients into wet ingredients until combined but do not over mix. (mix with a spoon)
  4. Stir in 1/3 cup white chocolate chips + 1/3 cup milk chocolate chips.
  5. Divide batter into 12 cupcake liners equally. (try to fill 3/4 of a cupcake liner with batter). Sprinkle with chocolate chips left.
  6. Bake for 5 minutes at 220c. reduce heat to 180c and bake for 15 more minutes or until a wooden toothpick comes out clean from the centre of the muffin.
  7. Cool for 10 minutes. Store in sealed container if not consumed immediately.
