This is a basic, no-fail recipe. Made with basic ingredients that you can always find in your kitchen.


These classic, simple, light, soft and fluffy pancakes are not too sweet and are lightly scented with vanilla. One tablespoon of baking powder does the trick, you get fluffy pancakes that aren't hard or flat and do not taste like cardboard and chemicals.
They're moist, healthy and satisfying!



We don't like heavy and flat pancakes, to prevent this make sure that you don't over-mix the batter, mix all ingredients together using a spoon or a fork just to get rid of the big lumps, and it's okay to have small lumps in your batter.

I served these pancakes with a sugary homemade pancake syrup that I prepared, it tastes fabulous and only takes 5 minutes to make. I didn't add the maple syrup extract as I didn't have any, and it still tasted great!

Classic Pancakes Recipe
(Serves: 10 pancakes)
Ingredients
  • 1 1/2 cups all purpose flour
  • 4 tbsp unsalted butter (melted)
  • 2 tbsp white sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 1/4 cups warm milk
  • 1 tsp vanilla
  • Pancake syrup (optional)
  • Whipped cream (optional)
Instructions
  1. Mix all dry ingredients in a bowl.
  2. In another bowl mix milk with egg and melted butter.
  3. Pour the milk mixture into the dry ingredients and mix using a fork to remove big lumps (DO NOT over mix).
  4. Lightly brush a frying pan with piece of butter. Using a 1/4 measuring cup spoon the batter and spread it into a circle.
  5. When bubbles appear on your pancake, turn over. Cook until pancake is lightly brown and cooked in the middle.
  6. Drizzle with maple syrup and serve.
