Freezing local herbs in olive oil in harvest season is a great way to have fresh herbs during fall and winter. This is very convenient, healthy, and easy! you start by chopping the herbs (thyme, rosemary, basil, parsley, cilantro, sage, oregano…), fill ice cube tray with chopped herbs then pour olive oil into each cube leaving a little space at the top (olive oil will expand when freezing), and place in the freezer. Pop out an ice cube when you're cooking or just put a cube in your salad bowl. they melt pretty quick and it's a great way to control your oil and fat intake.
I also freeze lemon juice as in the picture below, making an entire ice cube tray saves you from having to find fresh lemons and squeeze out the juice each time you cook!
