Since everyone needs a delicious coffee cake recipe in their recipe box, this peach coffee cake recipe is the perfect one!
This is my Mum's favourite coffee cake recipe, she has it written on a piece of paper along with her recipes collection, I believe that she once found it online and wrote it down, the original recipe calls out for blueberries and the name of the recipe is Janet's blueberry coffee cake. I searched for it, but could not find it. This coffee cake is moist and very delicious. I used peaches instead of blueberries for one simple reason, they don't sell fresh blueberries anywhere here! You can only find the sweetened canned option which I only use as a topping for a cheesecake.
I think I have mentioned this before, but I'm not a fan of coffee, I prefer tea. Good quality tea. My favourite is probably green tea with jasmine, and in my family we drink green tea quite a lot because of all of the health benefits that everyone has been talking about. So I think that this peach coffee cake is great with a cup of tea, or coffee (if you like coffee)! it's simple and is easy to make - just read the directions carefully and you'll end up baking an amazing coffee cake.
If you decide to try this recipe, make sure you don't skip the streusel, it is very necessary! The cake itself has a moist texture and topping it with a generous amount of streusel only makes it perfect.
Peach Coffee Cake Recipe
Serves: 12 servings
Ingredients
- 1 can of peach
- 2 cups all purpose flour (280 grams)
- 1 1/4 cups granulated sugar (300 grams)
- 1 cup milk
- 2 eggs (separated)
- 2/3 cups butter (170 grams)
- 2 tsp baking powder
- 1 tsp salt
Instructions
- Preheat oven to 165° and grease a 30x20x5 cm pan.
- In a medium sized bowl mix flour with sugar and butter (cut butter into chunks) and take off 1/2 cup of the mixture (for the streusel), set aside.
- Take the rest of the mixture and add the baking powder, salt, egg yolks, and milk. Mix well. Add beaten egg whites beating gently to combine.
- Pour batter into prepared pan along with the peaches, and top with the prepared streusel with your hands until evenly distributed.
- Bake for 40-45 minutes. If you're using a glass pan like I have, bake for additional 10 minutes.
