Extra dense, wonderfully moist, and delicious!

 

Who knew that zucchini bread could be so delicious?? Whenever I went on Pinterest and came across zucchini bread pins, I thought who would wanna eat a zucchini vegetable cake??! As in my imagination it did not sound very delicious. But, I thought why not give it a try and see what all the fuss was about??


So last weekend my Mum mentioned that we bought some zucchinis but did not cook them yet, and that they will go bad if we don't do anything with them. So I went to Allrecipes.com and found a recipe that received loads of 5 stars ratings, got all the ingredients out and started baking!

In 1 hour and 15 minutes the house smelled wonderful and I had 2 beautiful loaves that my family LOVED. And it's a great way to get the kids eat their vegetables! My niece even said that she now loves zucchini (but in cake not for dinner!!) - she made us laugh!



It holds up well while slicing, it's not too sweet, and it's super healthy!!

Zucchini Bread Recipe
Serves: 2 loaves
Ingredients

  • 3 eggs
  • 3 cups flour
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 3 tsp ground cinnamon
  • 1 tsp vinegar
  • 3 tsp vanilla extract
  • 1 tsp salt
  • 3 cups grated zucchini
  • 1 cup chopped walnuts (optional)

Instructions
  1. Preheat oven to 180°.
  2. Sift together flour, salt, cinnamon, soda, and baking powder.
  3. In a big bowl beat eggs and add sugar, oil, vinegar, and vanilla. Mix, then add grated zucchini.
  4. Add dry ingredients to wet ingredients and mix. Stir in walnuts if desired.
  5. Pour into 2 greased loaf pans and bake for one hour.

Store: in airtight container or wrap it in a ziploc bag so it does not dry out and store in room temperature.
